We like to tie our archaeological visits to ancient food, food supply, cooking, and eating. That means we’ll seek out an emperor’s seaside dining room, the warehouses in ancient ports, and ancient cooking utensils in little-known museums. But we won’t miss, say, the magnificent temples of Paestum, Selinunte, and Agrigento. Likewise, we try to relate our fantastic local meals and tastings to their cultural context. We indulge in the best mozzarella on a buffalo farm, the best pasta in the birthplace of the modern pasta industry, and the most flavorful seafood where it was caught. We see how Michelin-starred chefs remain loyal to their territory, and examine how traditional fare is faring in twenty-first century Italy.

Our groups are small (usually six or eight, occasionally up to twelve). Our accommodations range from very comfortable to pretty luxurious. Practically everything is included, including airport transfers and plenty of wine.
